Instructions
Step 1
1. Coat the aubergine slices in cornstarch and fry in a pan with some oil until nice and brown. Drain on paper towel and put aside.
Step 2
2. Combine the minced garlic, ginger paste, sliced spring onion, sugar, soy sauce and water. Wipe down the pan and simmer the mixture for 5 minutes or until thickened.
Step 3
3. Add the aubergine back in and simmer for an additional 5 minutes. Serve with noodles, rice or dumplings.
