Cha Sui Chicken with prawns noodles bok Choi in a coconut broth

Instructions

Step 1
Add the marinade ingredients to a bowl and mix well.
Step 2
Using a fork prick the chicken breasts all over to allow the marinade to penetrate the meat. Add the chicken into the bowl and coat the chicken, add more ingredients if there is not enough or keep mixing occasionally to ensure that the chicken is marinated.
Step 3
Leave to marinate for at least two hours.
Step 4
Once marinated place the chicken into a large pan with a little oil on medium-high heat and colour the chicken on both sides for around 4 minutes on each side.
Step 5
Pour in the remaining marinade and cook for another minute or until the marinade is hot.
Step 6
Transfer the chicken and marinade to a baking sheet place into a preheated oven at 160 and cook until the chicken is cooked through.
Step 7
Add all the paste ingredients to a blender or pestle and mortar and blend until a smooth paste is formed.
Step 8
Add the paste into a pan with a little oil on medium heat and heat for about two minutes continuing stirring.
Step 9
Add in the coconut milk while stirring and add in the stock and simmer for about 10 minutes. Cook the noodles according to the manufacturer's instructions. Add a little oil to a wok or large frying pan and cook the bean sprouts for a few minutes.
Step 10
Slice the Pak choi into a griddle pan and fry them for about two minutes.
Step 11
Add the prawns into the broth, and drain the noodles.
Step 12
Time to plate up, remove the chicken from the oven and slice it into bite-size pieces.
Step 13
Add portions of each noodle to a bowl, and add a portion of bean sprouts to the bowl and the Pak Choi.
Step 14
Remove the prawns from the broth and add to the bowl and then ladle some of the broth into the bowl.
Step 15
Serve, lick your lips and enjoy.
