Step 1
Mix garlic ginger peanut butter rice vinegar soy chili sauce sesame oil and lime juice in a container until smooth add some hot water to thin it out slightly if necessary

Step 2
Add soba noodles to boiling water and cook for two minutes then add edamame to the same water and cook another 2 minutes

Step 3
Heat the peanut sauce in a hot pan with a drizzle of oil then toss in the edamame and noodles with a small bit of the noodle water and mix to combine then toss together and serve . I like to garnish with coriander spring onions crushed peanuts and sesame seeds
