Ingredients

1.3 lbboneless skinless chicken thighs

1 ½ teaspoonsmoked paprika

1 teaspoondried oregano

½ teaspoongarlic powder

¼ teaspoononion powder

¼ teaspoonblack pepper

¼ teaspooncayenne pepper

½ teaspoonsalt

1 tablespoonolive oil

1onion
small

2cloves garlic

¼ cupdry white wine

¾ cuplow salt chicken stock

¾ cupheavy cream

¼ cupparmesan
freshly grated

0.5 bunchbasil

6 ozbaby plum tomatoes
Instructions
Step 1
Coat both sides of the chicken thighs with the seasoning.
Step 2
Add the olive oil to a large pan over medium heat. Once hot, add the thighs and fry both sides until lightly charred and cooked right through the center.
Step 3
Remove the chicken and place on a plate.
Step 4
Lower the heat to medium. Finely dice the onion and cook until it begins to soften (approximately 2 min)
Step 5
Add the garlic cloves and fry for 30 seconds.
Step 6
Pour in the wine and then raise the heat to a rapid simmer. Cook for around 2 minutes until the wine almost evaporates. Lower the heat.
Step 7
Add the stock, cream, and parmesan. Simmer for 3-4 minutes, until the sauce thickens, stirring frequently.
Step 8
Add the tomatoes (cut in half) and basil. Cook until the tomatoes begin to soften.
Step 9
Turn the heat to low, add the chicken back and spoon over the sauce for a minute. Serve and enjoy!
