Instructions

Step 1
Sear and season the chicken: After patting the chicken dry, add Italian seasoning, salt, and pepper. In a skillet, heat the olive oil over medium-high heat. Sear chicken until golden, 5 to 6 minutes per side. Take out and put aside.
Step 2
To prepare the sauce: Sauté the garlic for 30 seconds in the same skillet. To deglaze, add chicken broth while scraping away any browned bits. Add spinach, sun-dried tomatoes, Parmesan, and heavy cream and stir. Simmer until slightly thickened, 3 to 4 minutes.
Step 3
To finish and serve: Put the chicken back in the skillet and cover it with sauce. Cook until the chicken reaches 165°F (74°C), 2 to 3 more minutes. Add more Parmesan and red pepper flakes as garnish. Serve
