Leftover Chilli Cheese Orzo A couple of days ago I made a chilli for dinner, there was a portion leftover, which I was going to have for lunch...but I decided to make a whole new dinner out of it!! This was so creamy and cheesey, still with a bit if a kick AND it was oven baked in one pan, with only 5 ingredients!! I love it when one dinner becomes two with no faffing. You could definitely do this with leftover bolognese too I've written up the recipe below, so make sure you hit save, A x Feeds 4 700ml chicken stock 200g soft cheese (Philadelphia style) 400g leftover chilli 200g dried orzo 80g grated cheddar cheese Heat the oven to 200C Make up the hot chicken stock and whisk in the soft cheese. Microwave the stock to boiling point and do the same for the leftover chilli. Place the chilli in an ovenproof dish, stir in the dried orzo and stock, season with salt and pepper and give it a good stir. Place in the oven for 20 minutes. Remove from the oven, give it a stir and cover the top in grated cheese. Return to the oven for 15-20 minutes, or the orzo is cooked through and the cheese is golden brown.

Instructions

Step 1
Heat the oven to 200C
Step 2
Make up the hot chicken stock and whisk in the soft cheese.
Step 3
Microwave the stock to boiling point and do the same for the leftover chilli.
Step 4
Place the chilli in an ovenproof dish, stir in the dried orzo and stock, season with salt and pepper and give it a good stir.
Step 5
Place in the oven for 20 minutes.
Step 6
Remove from the oven, give it a stir and cover the top in grated cheese.
Step 7
Return to the oven for 15-20 minutes, or the orzo is cooked through and the cheese is golden brown.
