Rice Shrimp Patties & Green Yogurt

I love finger food and dishes that can be enjoyed with your loved ones. As shrimp season commences. Let’s make some patties. The yogurt dip I usually make a big batch as I know it will go fast :) so adjust as needed.

Instructions

Patties

Step 1
We start with the rice, wash, sprout and cook with the bay leaf according to a previous recipe (How to: Cook Rice). Also check out How to: Sprouting if you interested in sprouting your grains and legumes.
Step 2
Let the rice cool down completely.
Step 3
Peel, devein and wash the shrimp. And pat dry.
Step 4
Roughly chop the greens and the shrimp.
Step 5
Place all ingredients; rice shrimp & greens with salt and black pepper, into a food processor with a couple of teaspoons of olive oil.
Step 6
Pulse the mixture, then process on low to medium speed. Don’t over process it or the rice will turn gluey and you’ll overheat the shrimp.
Step 7
Once all incorporated. Now on to shaping the patties into whatever shape you like.
Step 8
First oil your hand so the mixture won’t stick to your hand.
Step 9
Shape into patties or balls. Each patty is around 25-30g, and that will yield 15 to 16 pieces.
Step 10
There are many ways of cooking the patties, the most basic way is to cook them in a preheated oven for 20minutes on 200 degrees celsius, if your oven has a fan it will take 15mins.

Yogurt Dip

The yogurt dip, just blend all ingredients together and keep refrigerate.

Serve with a side of salad and enjoy.
