Smoked Turkey Breast

This recipe shows you how to smoke a boneless turkey breast on your pellet smoker (which is a great alternative to smoking a whole turkey).

Instructions
Step 1
Remove the defrosted turkey breast(s) from the refrigerator
Step 2
Remove the turkey breast(s) from the package and drain off any brine liquid.
Step 3
Use papertowels to pat down the turkey breasts to remove any excess moisture
Step 4
Cut off any skin, fat, or silverskin from the outside of the turkey breast(s)
Step 5
Season outside of turkey breast(s) with Meat Church Honey Hog BBQ rub, making sure to apply to the top, bottom, and sides.
Step 6
While turkey breasts are marinating in the seasoning, fire up your smoker to 220 degrees fahrenheit (hi-smoke setting) using hickory or pecan wood pellets
Step 7
When your smoker gets up to temp, place your turkey breasts on the smoker, and sprinkle on a little more seasoning to replace any that may have rubbed off during handling.
Step 8
Let your turkey breast smoke on the hi-smoke setting for 30 minutes
Step 9
In a small sauce pan, melt two sticks of salted butter.
Step 10
After 30 minutes, drizzle butter over the top of the turkey breasts with a basting brush, making sure not to rub off any of the seasoning.
Step 11
Increase the temperature from 220F to 250F
Step 12
After another 30 minutes, check the internal temp of the thickest part of the turkey breast with an instant digital thermometer (to make sure you have not hit internal temp of 160F yet), and then drizzle more butter over the top of the turkey breasts
Step 13
Add 2 tablespoons of honey, and 1 tablespoon of brown sugar to your small sauce pan of warm melted butter
Step 14
Once your turkey breasts hit an internal temp of 145F, drizzle the warm honey butter mixture over the top of the turkey breasts
Step 15
Once your turkey breasts then hit an internal temp of 160F, remove from the smoker and place on an aluminum tray to rest.
Step 16
Loosely cover the turkey breasts with aluminum foil and allow to rest for 10 minutes.
Step 17
Remove the foil, and slice the turkey breasts into 1/4 inch+ slices and serve. Enjoy!
