Ingredients
4 servings

1salmon head

1.5 lbssalmon
cut into 1-inch strips

3 Tbspcooking oil

1onion
large, quartered

3 clovesgarlic
crushed

1 x 2 inchginger
cut into 1/8-inch slices

2tomatoes
medium, quartered

4 x 14.5 ozcans low sodium chicken broth

2 cupswater

3taro root
small, cut into 1-inch thick slices

1jalapeno
cut in half lengthwise and deseeded

1 Tbsppatis

¼ tspground black pepper

1 x 1.4 oztamarind soup mix
packet

0.25 lbgreen beans

0.25 lbokra

5 bunchesbaby bok choy

Instructions
Step 1
Pat the salmon head and belly dry with a paper towel. Season with salt and pepper and set aside.
Step 2
Preheat the Instant Pot on Saute setting. When the inner pot is hot, pour in the cooking oil. When the oil is shimmering, add onion, garlic, ginger, and sweat until aromatic, about 2 to 3 minutes.
Step 3
Add tomatoes and saute until tender, about 5 minutes.
Step 4
Add salmon head, broth, water, taro, jalapeno, patis, pepper, 1/2 of the Tamarind soup mix (sinigang mix), green beans, and okra. Select Manual and program for 5 minuters on High Pressure. When cooking is complete, quick release pressure manually.
Step 5
Unlock and carefully remove the lid. Select Saute and adjust to Less mode. Add salmon belly and bok choy. Simmer uncovered until bok choy is tender, about 7 minutes. Adjust seasoning with salt and sinigang mix.
