Instructions
Step 1
In small bowl, Combine graham cracker crumbs and butter.
Step 2
Press gently onto the bottom of 12 paper lined muffin cups.
Step 3
In another bowl, beat cream cheese, sugar and vanilla until smooth.
Step 4
Add egg, beat on low until just combined.
Step 5
Spoon over crust.
Step 6
Bake at 350 degrees for 15 - 16 minutes or until center has set.
Step 7
Cool for ten minutes before removing from pan to a wire rack to cool completely.
Step 8
Refrigerate for at least 1 hour.
Step 9
Remove the paper liners and top each cheesecake with 1 teaspoon of jam.
