Preheat a waffle iron according to the manufacturer's instructions. Spray the waffle iron with cooking spray

Combine the cream cheese, eggs, melted butter, coconut flour, stevia, baking powder, vanilla, and cinnamon, if using, in a blender and blend on high until smooth, about 1 minute. Alternatively, you can beat the ingredients in a bowl with an electric mixer until smooth, about 3 minutes
Step 3
Pour about 1/4 cup of batter onto the hot waffle iron. The batter will spread only a little bit, unlike conventional waffle batter, so spread it out a little with a spoon before closing the lid. Cook until browned. Repeat to make 4 waffles
