Instructions

Step 1
Cut up onion, jalapeño, spinach, and carrots and described in the ingredients.
Step 2
In a large bowl, mix all ingredients together. For best flavor, let set in fridge overnight. You can also cook as is without letting it sit.
Step 3
Pre heat oven to 350F. Line a baking sheet with parchment paper.
Step 4
Scoop out 2oz of mixture. Form the meatballs by rolling them in your hands. I wear gloves for this step so the mixture does not stick to my hands as I'm rolling then.
Step 5
Place on lined baking sheet. Bake For 20 minutes. Place under the broiler for 5 minutes until golden brown on top
