Potato Broccoli Chicken Alredo

Instructions

Step 1
1. Boil the Potatoes. Place the baby potatoes in a pot and cover with water. Add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 8 to 15 minutes. Drain and let them cool slightly.

2. Mash the Potatoes. Preheat your air fryer to 400ยฐF. Place the potatoes on a cutting board or baking sheet. Using the bottom of a glass or a potato masher, gently press down on each potato to flatten them slightly.

3. Air Fry the Potatoes Arrange the potatoes in a single layer in the air fryer basket Depending on the size of your air fryer, you might need to do this in batches. Drizzle or spray the potatoes with olive oil. Sprinkle with ranch seasoning, sea salt, and rosemary. Cook for 20 minutes at 356ยฐF, flipping halfway through, until the potatoes are crispy and golden brown.

4. Prepare the Chicken Alfredo Mixture While the potatoes are cooking, in a bowl, combine the shredded chicken, broccoli, Parmesan cheese, cheddar cheese, chicken broth, cream cheese, light double cream, garlic granules, and cracked black pepper. Mix well until everything is combined.
Step 5
5. Combine and Serve Remove the potatoes from the air fryer and transfer them to a serving platter. - Top the potatoes with the chicken Alfredo mixture. - Garnish with fresh herbs and serve immediately.
Step 6
6. Optional For a cheesy topping, you can add some of the chicken mixture to a baking tray, sprinkle extra cheese on top, and broil for 5 minutes until the cheese is melted and bubbly
