Step 1
Preheat oven to 200c and cut the potatoes into bitesize pieces (skins on).
Step 2
Cut the onion into wedges. Add these to a baking tray along with the potatoes and cherry tomatoes. Add a pinch of salt and some olive oil. Put in oven for 25-30 minutes.
Step 3
Drain and pat the mozzarella dry (squeeze as much liquid out as you can) Tear into rough bite size pieces.
Step 4
Add the chicken breasts to a tin foil lined baking tray. Top with the basil nut pesto and the mozzarella. Season with salt and pepper. Put in oven for 20 minutes.
Step 5
Serve the chicken with the Caprese bake to the side. Pour over any remaining chicken juices.
