INGREDIENTS:
1 cup of self raising flour (125g)
Half a cup of brown sugar (90g)
4 tbsp of melted butter
2 eggs
2 handfuls of blueberries

METHOD:
Turn the oven to 180 degrees Celsius.
Add the blueberries to a bowl along with the brown sugar, butter and eggs and mix.
Sieve the flour in and fold the mixture together.
Pour the mixture into a lined loaf tin.
Bake the loaf at 180 for 35 minutes (or until a skewer comes out clean).
After which, transfer to a cooling rack for 20 minutes before slicing.
That’s it!

Serve!
If you want to omit the sugar for babies, swap it for 2 mashed bananas instead.
You can use chia eggs instead of eggs if you wish.
You can swap the butter for sunflower oil or coconut oil if you prefer.
