boneless, skinless cut into small pieces

1 tspsalt

1 tsppepper

¼ cupolive oil

4garlic cloves
minced

1green pepper
large, diced

1jalapeno
chopped

2onion
medium, cut into wedges

4Yukon Gold potatoes
medium, peeled and cubed

1bay leaves

1 teaspoondried thyme
crumbled

⅓ cupparsley
chopped

½ cupdry red wine
Instructions
Step 1
Salt & pepper chicken, brown in olive oil on all sides then remove. Turn heat down, add garlic, peppers and onion to oil. Simmer slowly until vegetables are soft, stirring often. Return chicken to pan with remaining ingredients. Cover and simmer slowly 45-60 until chicken and potatoes are tender.
