Ingredients

1.5 lbsboneless skinless chicken breasts
2 Tbspsolive oil
1yellow onion
large, chopped
2stalks celery
finely chopped
1 ½ cupscarrots
shredded
1 tspdried parsley
2 clovesgarlic
minced
½ tspdried thyme
½ tspsalt
¼ tsppepper
32 ozlow-sodium chicken broth
¾ cupheavy cream
1 Tbspcornstarch
1 lbgnocchi pasta
pkg
2 cupsfresh spinach
roughly chopped
¼ cupgrated Parmesan cheese
Instructions
Step 1
1. In a large skillet, heat oil over medium heat. Add onion, celery and carrots; cook until vegetables are slightly softened, about 5 minutes.
Step 2
2. Transfer vegetables to slow cooker. Stir in parsley, garlic, thyme, salt, and pepper.
Step 3
3. Add chicken breasts and broth. Cover and cook on low 4-6 hours.
Step 4
4. Remove chicken and shred; return to slow cooker.
Step 5
5. In a small bowl, whisk together cream and cornstarch. Stir cream mixture into soup with the gnocchi, spinach and Parmesan cheese.
Step 6
6. Cover and cook another 20-30 minutes.
