Ingredients

3 lbboneless pork shoulder roast
1yellow onion
large, cut into wedges
1 cuplow-sodium chicken broth
2 Tbspsdried parsley
7 clovesgarlic
minced and divided
2 Tbspsapple cider vinegar
2 Tbspslemon juice
divided
2 tspsground cumin
1 tspdried mustard
1 tspdried oregano
½ tspsalt
½ tsppepper
1 ¼ cupsfat-free mayonnaise
2 TbspsDijon mustard
10whole-wheat hamburger buns
split
Swiss cheese slices
1sweet onion
medium, sliced
dill pickles
sliced
Instructions
Step 1
1. Place onion wedges and chicken broth into slow cooker.
Step 2
2. In a small bowl, combine parsley, 5 cloves minced garlic, vinegar, 1 tablespoon lemon juice, cumin, dried mustard, oregano, salt and pepper. Rub over pork.
Step 3
3. Add pork to slow cooker. Cover and cook on low 6-8 hours until meat is tender.
Step 4
4. Take meat out of slow cooker, and let stand 10 minutes before slicing.
Step 5
5. In another small bowl, combine mayonnaise, Dijon mustard, remaining 2 cloves minced garlic and 1 tablespoon lemon juice; spread over buns.
Step 6
6. Layer bun bottoms with pork, cheese, sliced sweet onion and pickles; replace tops.
Step 7
7. Cook on a panini maker or indoor grill until buns are browned and cheese is melted, 2-3 minutes.
