Ingredients

12 ounceschicken breast skinless boneless
2 small chicken breasts or 1 large chicken breast, halved
¼ tsplemon pepper seasoning
1 Tbspbutter
¼ tsppaprika
salt
½ Tbspolive oil
2garlic cloves
minced
⅓ creduced fat mozzarella cheese
shredded
⅓ chalf and half
5 ouncesspinach
fresh
2slices Pepper Jack cheese
or Monterey Jack Cheese with Jalapenos
2 ounceswhite mushrooms
sliced
Instructions
Step 1
Preheat oven to 375 degrees
Step 2
Brush a 13×9-inch baking dish with melted butter. Season the chicken breasts with salt, paprika, and lemon pepper, ensuring they are well coated. Arrange the seasoned chicken breasts in the prepared baking dish with the fatty part facing down. Place the dish in the preheated oven and bake for approximately 20 minutes. Remove from the oven and let it rest at room temperature.
Step 3
Heat vegetable oil in a skillet, cook spinach, set aside. In the same skillet, mix half & half with garlic, add shredded cheese. Return spinach to the skillet, cook for one more minute, then season with salt and pepper.
Step 4
Place a pan on the stove, set the heat to medium, and add 1 tbsp of vegetable oil. Allow the oil to become hot before sautéing the mushroom slices until they are soft and caramelized.
Step 5
Spread creamed spinach, mushrooms, and cheese on top of each chicken breast. Place them back in the oven and bake for an additional 20 minutes. Broil for about 2 minutes or until the cheese turns golden brown. Serve and enjoy!
