Basic cherry cake

The most simple cake batter is the key to all of these cakes. Then it's just a case of ratio and flavourings. I am sure some of you will be screaming over the use of extra baking powder and bicarb, but trust me, this is time tested and works well. If you are adding things to the cake, then an easy technique I have found is to put them in the sieve when I am sieving the flour. This ensures they get a good coating.

Instructions

Step 1
Cream the butter and sugar together. It should get lighter in colour. Dairy free butter works great here as well.
Step 2
Sieve the flour and cocoa and add.
Step 3
Add in everything else apart from the cherries
Step 4
Mix until everything is combined
Step 5
Add the cherries and fold in to the batter
Step 6
Turn out into a 2lb loaf tin, or anything of a similar size, and bake at 175 Celsius for 40 minutes.
