From the tree to your table, this Apple Tarte Tatin is loaded with crisp, tart, sweet flavours and a deep, buttery, rich caramel. You can make it two ways: by building it all at once the way I outline, or by first making the caramel with sugar and water, adding butter as you go. Either way will give you a show stopping tart for a special dinner, holiday table, or a treat for close family.

Instructions

Step 1
Sliced tops and bottoms from apples peel and quarter trimming the core away. Transferred to a bowl and keep in the fridge lightly covered for up to three days before needed.
Step 2
When ready preheat oven to 375°F. Thickly coat the bottom of the pan with butter. Preferably, you should use an oven proof nonstick skillet. Cast-iron also works. sprinkle the sugar into the pan evenly.
Step 3
Sprinkle the apple spice onto the apples along with the vanilla extract. Maxwell. Arrange your apples into the pan so that they fit into each other snuggly.
Step 4
Roll out the puff pastry and cut out a large circle slightly larger than the pan. Place on top of the apples, pressing gently and tucking it into the edges, holding the apples together.
Step 5
Take the skillet to the stove and bring up to a medium heat ensuring the juices are bubbling. Keep it out of boil until the juices turn dark brown and caramelized. This should take 10 to 12 minutes. Take off the heat.
Step 6
Brush well with egg wash and bake for 45 to 15 minutes or until pastry is deep, brown and firm.
Step 7
Let cool for about 10 minutes and then carefully transfer it out onto a serving dish. Slice into wedges and serve immediately with a good quality, vanilla ice cream or crème fraîche.
