Instructions
Preheat the oven:

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.
Prepare the potatoes:

In a large bowl, toss the halved gold baby potatoes with olive oil, minced garlic, rosemary, thyme, lemon zest, smoked paprika (if using), salt, and pepper. Ensure the potatoes are evenly coated with the oil and herbs.
Roast the potatoes:
