halved

3 Tbspolive oil

2cloves garlic
finely minced

1 Tbspfresh rosemary
finely chopped tsp

1 Tbspfresh thyme leaves
or 1 tsp dried thyme

1zest of lemon

¼ tspsmoked paprika
optional for added depth

freshly ground black pepper

Fresh parsley

Instructions
Preheat the oven:
Step 1
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.
Prepare the potatoes:

In a large bowl, toss the halved gold baby potatoes with olive oil, minced garlic, rosemary, thyme, lemon zest, smoked paprika (if using), salt, and pepper. Ensure the potatoes are evenly coated with the oil and herbs.
Roast the potatoes:

Spread the potatoes in a single layer, cut side down, on the prepared baking sheet. Roasting them cut side down helps create a crispy, caramelized surface.

Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges, and fork-tender inside. Halfway through the roasting time, flip the potatoes to ensure even browning.
