Doughnuts

350mlapple juice
reduced to 110ml

50mlwhole milk

4gactive dry yeast

1egg
large

50ggranulated sugar

50gunsalted butter
room temp

325gall-purpose flour
plus extra for dusting

1 tspground cinnamon

Β½ tspground nutmeg

Β½ tspsalt

vegetable oil for frying

Instructions
Step 1
Pour the apple juice into a saucepan and bring it to a boil, simmer for 10 to 15 min (until the juice is reduced to about 110ml) - let it cool slightly before using it
Step 2
In the meantime, combine the milk with the active dry yeast and set it aside
Step 3
In a large bowl, whisk together the egg, sugar, melted butter, milk and active dry yeast and the reduced apple juice
Step 4
Add half of the dry ingredients (flour, cinnamon, nutmeg and salt) and mix until combined before adding the other half
Step 5
Turn the dough onto a floured surface and gently knead it until smooth before transferring it to a floured bowl to let it rise at room temperature for about 1 hours
Step 6
On a floured surface, roll the dough out and using a donut cutter cut out the dough
Step 7
Pour about 5cm of vegetable oil into a deep, heavy pot or a deep fryer and heat to 155Β°C
Step 8
Carefully drop a few donuts at a time into the hot oil and fry for about 3min per side
Step 9
While the donuts are still warm, toss them in the cinnamon sugar mixture until fully coated
