These chicken nuggets are extra crispy courtesy of a secret ingredient...pork panko!
Pork panko is a great alternative to normal panko and perfect for those who have a gluten allergy. It's also great for anyone on keto, paleo, diabetic, and bariatric diets.

1 lbchicken breast
cut into cubes

1egg
large

2 Tbsppickle juice

¼ cuppork panko

1 tsppaprika

1 tspgarlic powder

¼ tspsalt

¼ tsppepper

Instructions
Step 1
Preheat air fryer to 400 degrees.

Step 2
In a shallow bowl, crack in a large egg. Add the pickle juice and whisk together.



Step 3
In a second shallow bowl, add the pork panko, paprika, garlic powder, salt and pepper. Mix together.






Step 4
First, dip your chicken cubes into the egg mixture. Shake off excess and then place into the pork panko mixture. Make sure to coat the cubes evenly and shake off excess.
Step 5
Arrange in a single layer and air fry for 8-10 minutes, flipping halfway through.
Step 6
To make the sauce mix together the mayo, dijon, mustard, ketchup, salt and pepper. Season to taste and you can store in the fridge for a few days.






Step 7
Once chicken is cooked, remove and let cool for a few minutes. Then finish with some finishing salt and enjoy!
