Creamy Mashed Potatoes

Instructions

Step 1
Preheat oven to 400
Step 2
Take a fork and put about 8 perforations into each potato (4 on each side)
Step 3
Wrap each potato up in foil and place on a pan
Step 4
Place pan into oven
Step 5
Bake until potatoes reach an internal temperature of 210F degrees, or are fork tender (about 80 minutes)
Step 6
Remove the potatoes from the oven and remove from foil
Step 7
Add the heavy cream, rosemary, and garlic into a pot and allow to simmer for 20 minutes
Step 8
While the cream mixture is simmering, Cut the potatoes in half lengthwise and scoop out the potato halves from the skin into a ricer
Step 9
Squeeze the potatoes through the ricer to create fine strands of potato
Step 10
Add butter (garlic confit infused homemade butter is best)
Step 11
Add half of the cream mixture and salt to the potatoes and stir
Step 12
Add 2nd half of the cream mixture and salt to the potatoes and stir again
Step 13
Sprinkle a little rosemary on top for garnish
Step 14
Serve and enjoy!
