Instructions

Step 1
Preheat oven to 425 degrees F.
Step 2
In a large skillet, brown one side of one tortilla over medium-low heat. Add a small amount of oil as needed.
Step 3
Place cooked tortilla cooked side up on non-stick cookie sheet.
Step 4
Over medium-high heat, cook ground chicken in the same skillet. Season to taste during cooking (garlic salt and fresh ground black pepper). You can substitute extra lean ground beef or turkey if desired.
Step 5
Add cooked chicken to top of cooked tortilla on cookie sheet. You may not use all ground chicken.
Step 6
Add some pizza sauce (~2 oz) atop chicken, just enough to allow cheese to adhere to it.
Step 7
Top with half the mozzarella cheese.
Step 8
Place 2nd tortilla on top, pressing down gently to make level.
Step 9
Spread remainder of pizza sauce on top of 2nd tortilla.
Step 10
Top with remainder of mozzarella cheese.
Step 11
Top with as much turkey pepperoni as preferred.
Step 12
Cook in oven for 12-15 minutes until cheese cooked and beginning to brown.
Step 13
Allow to cool, slice, and serve!
