Apple Flaxseed Protein Muffins

I used Gala apples but by all means Use what You have or like same goes for the Walnuts, Flour , You choice of Sweetener. I use unsalted raw nut when baking and pure Vanilla Extract. If you wanted You could probably even add more protein powder but remember to write it down if you change it so you can calculate nutritional information since it will change.
Best tip for Protein Powder and Cottage cheese blend them together really well

Ingredients

2 ½ cupswhole wheat flour
1 teaspoonbaking soda
1 teaspoonbaking powder
1 cuplow fat cottage cheese
2 scoopsvanilla protein powder
4 Tablespoonsflaxseeds
Milled
2 tablespoonsvanilla extract
2 tablespoonsground cinnamon
1 cupegg whites
1 cupno fat greek yogurt
¾ cupLight Agave
1 cupchopped walnuts
2Apples
Medium, peel and dice
Instructions
Step 1
Preheat Oven 400°
Step 2
Mix the first 4 dry ingredients in order stop
Step 3
Now you need to blend All the Wet ingredients but included the protein powder and flaxseeds blend well at least 1 or 2 minutes
Step 4
While that blend chops a cup of Walnuts roughly
Step 5
Combine Dry and Wet ingredients in Stand mixer or use a hand mixer
Step 6
Core and peel your apples then slice and dice them
Step 7
Line a muffin pan with paper liners and use a even don't overfill ice cream scoop into each muffin tin too with apples and chopped walnuts about a tablespoon combined
Step 8
Bake 35-40 minutes until toothpick comes out clean
