Step 1
Preheat. Preheat the oven to 350F.

Mix the dough. Use an electric mixer to mix together the eggs and coconut sugar.
Step 3
Add the peanut butter, vanilla, and sea salt.
Step 4
Mix again until the batter turns thick and sticky.
Step 5
Fold in the yummies. Add the cereal and marshmallows to the cookie dough and fold it in. Save some of the marshmallows to add to the tops of the cookies.
Step 6
Make the cookies. On a lined baking sheet, use an ice cream scooper (for big cookies) to scoop six mounds onto the baking sheet.
Step 7
Flatten the cookies. Get a small cup of water and dip a fork into the water. Use the wet fork to make a criss-cross imprint with the back of the fork on the top of the cookie dough balls.
Step 8
Add more mallows. Press some more colorful marshmallows to the top of each cookie.
Step 9
Bake and enjoy! Bake in the oven for 10 minutes and then transfer to a cooling rack. Sprinkle with flakey salt (if desired) and enjoy!
