Step 1
Preheat your oven to 375°F

Line a baking sheet with parchment or lightly grease it.
Step 3
In a large mixing bowl, combine ground chicken, diced onion, pressed garlic, bread crumbs, egg, minced parsley, and grated Parmesan cheese. Season with salt and freshly cracked black pepper to taste. Mix all ingredients until well combined

Divide the mixture into equal portions and shape them into small individual meatloaves. Place them on the prepared baking sheet.
Step 5
Bake in the preheated oven for 25-30 minutes, or until the meatloaves are cooked through and the internal temperature reaches 165°F (74°C).
Step 6
Optional Topping: If desired, sprinkle extra fresh grated Parmesan cheese on top of each meatloaf during the last 5 minutes of baking.
Step 7
Remove the meatloaves from the oven and let them rest for a few minutes before serving. Garnish with additional fresh parsley if desired.
