No Bake Cheesecake Bars

These cheesecake bars don't even require you to have an oven. It has mildly sweet banana and honey oatmeal crust, filling with Greek yogurt that's flavored by natural peanut butter and dates, and all topped by melted dark chocolate and chopped peanuts. No bake not only makes the recipe easier, but it preserves all the probiotics in the yogurt, making this a great fermented food at dessert time. For having no protein powder, this dessert is high in protein, as well as a good source of healthy fats, fiber, and complex carbs.

Line an 8" square pan with parchment paper. Evenly press your crust into the pan. Freeze to set as you prepare the filling

In a food processor, blend together peanut butter and dates until all the dates are fully chopped. Add in the yogurt and vanilla, and blend until smooth and fully combined

Use a silicone spatula to evenly spread the filling on top of the oatmeal crust. Freeze for a few minutes to harden as you prepare the topping

In a small bowl, combine together roughly chopped chocolate with water. Microwave in 30 second intervals, stirring in between, until you have a smooth ganache
