Instructions

Step 1
In a large bowl combine all the ingredients - the olive oil, the cider vinegar, the soy sauce, garlic, honey, salt and pepper. Add the four chicken thighs and stir well, so fully coated
Step 2
Leave to stand for at least 10 minutes. Half an hour is good
Step 3
Lay the four thighs into a deep roasting dish, skin side up. Pour all excess marinade on top. Now liberally spoon marmalade on top of each thigh
Step 4
Put roasting pan in the oven at 180 degrees Fahrenheit for 60 minutes. Baste frequently, taking care not to knock the marmalade off the thighs
Step 5
Serve with jacket potato and fresh vegetables
