Crazy Easy Flapjacks

This light and fluffy mixture can be used as a flapjack, American pancake, or waffle, depending on how you choose to make it. The batter if fluffy enough to hold chocolate chips or frozen berries. Once cooked and cooled, the flapjacks, American pancakes, or waffles freeze well for up to 3 months.

Instructions

Step 1
Sift flour, salt, baking powder and sugar into a mixing bowl

Add milk, egg yolks, and essence of choice into a measuring jug and whisk until combined

Pour the above liquid mixture into the dry mixture and combine with a spatula until a thick, smooth batter forms. Do not over mix

Beat the egg whites to a soft peak and gently fold into the above batter

The batter will be thick, but that makes for light and fluffy flapjacks or fluffy and crispy waffles
Step 6
Fry spoonfuls of batter for two minutes on one side in a lightly greased pan
Step 7
When the batter starts to make bubbles/holes, carefully flip, and they'll fluff up again
Step 8
Cook until lightly golden
Step 9
If the batter is too thick, add 1tbsp of full cream milk at a time until the batter has loosened up
Step 10
Serve with your favourite toppings.
