Creamy potato, white bean, and kielbasa soup

Instructions

Step 1
Drizzle olive oil in a pan and heat over medium high. Add bacon and cook to desired crispiness.

Add diced onion, chopped celery, and garlic. Then add diced carrots and seasonings. Cook until softened.
Step 3
Drain the liquid from the cans of beans. Then pour into the pot. Cook the beans for a few minutes, then add diced potatoes and vegetable broth.
Step 4
Cook until potatoes are softened. Carefully remove half of the soup and blend it. Then pour blended soup back into the pot and stir. If possible, try to remove any bacon before blending.
Step 5
Add sliced kielbasa and greens to the pot and let simmer until the greens are tender and the sausage is cooked.
