Instructions

Step 1
1. In a large pot, heat the vegetable oil over medium-high heat. Add the chopped carrots and diced onions. Cook until tender.

2. Add the minced garlic and cook for an additional minute, stirring frequently.

3. Stir in the quartered tomatoes, chicken broth, tomato paste, sugar, black pepper, salt, and chopped basil.

4. Bring the mixture to a boil. Once boiling, cover and reduce the heat to a simmer. Cook for about 30 minutes.

5. After simmering, process the soup through a food mill or strain it through a fine mesh strainer to remove skins and seeds.
Step 6
6. Stir in the heavy cream and return the soup to medium heat to warm it back to serving temperature.
