There’s nothing like Tomato Basil Soup. I wasn’t sure how the soup would come out since I didn’t use fresh tomatoes; but it was fantastic.

Ingredients
4 servings
2 tablespoonsolive oil
I used roasted garlic olive oil
2 tablespoonsbutter
1onion
chopped
2ribs celery
finely chopped
3garlic cloves
minced
1 x 28 ozcan of whole plum tomatoes
1 x 6 ozcan tomato paste basil garlic & oregano
1.5 x 14 ozcans of chicken broth
½ cupsherry cooking wine
2 tablespoonsfresh basil
chopped
½ teaspoondried thyme
salt
to taste
½ teaspoonfreshly ground black pepper
½ teaspoonsmoked paprika
½ cupheavy cream
Instructions
Step 1
Heat olive oil and butter in a large saucepan; add onions and celery, and cook to translucent
Pot
Step 2
Add garlic, cook for about a minute
Step 3
Add remaining ingredients, except cream
Step 4
Simmer on low heat for about 30 minutes
