no need to be too fussy ', fallers' will do fine but Bramleys are best

1.5 Ibssultanas

3 IbsDemerara sugar

4 ozsmustard seed
I don't use as much as this - I think 2ox is fine

2fresh chillies
or 4-6 dried, careful here, too

¼ tspcayenne

1 rounded dessert spoonturmeric

2 ozsground ginger

1.5 IbsSpanish onions
thinly sliced

6 clovesgarlic
crushed with salt

1 quartvinegar
Instructions
Step 1
Dice the apples, (this can be quite time consuming), cut chillies into small pieces. Place the whole lot into a pan, simmer for 1½ - 2 hours until pulpy, cool and put into jars.
