Instructions
Step 1
Preheat oven to 375. Cut tortillas into eighths and dump into large bowl.
Step 2
Brown beef and add taco seasoning. Stir in tortillas, beef, enchilada sauce, and most of the cheese, saving some to sprinkle over the top.
Step 3
Spread mixture over sheet pan. Sprinkle cheese over mixture. If desired, sprinkle jalapeños and olives over top. Bake at 375 for 25 minutes.
