Beef Enchiladas

Instructions

Step 1
Preheat the oven to 190°C, 170°C fan, gas 5. Grease a large baking dish (wide enough for the tortillas) with 1tbsp of oil
Step 2
In a small saucepan, combine all the ingredients for the enchilada sauce. Heat through and set aside.
Step 3
In a small bowl, combine all the ingredients for the spice mix and set aside.
Step 4
Heat 1tbsp of oil in a large non-stick frying pan and cook the beef mince for 3 minutes, over a medium-high heat, stirring occasionally. Drain the fat and add in the spice mix, cook for another 2 minutes until thoroughly cooked.
Step 5
Add half of the enchilada sauce to the ground beef mixture and simmer for 2-3 minutes.
Step 6
Spread half of the remaining enchilada sauce into the base of the baking dish. Divide the beef mixture between the tortillas and top each with a sprinkling of cheese.
Step 7
Wrap the tortillas tightly around the filling and place seam side down in the baking dish. Top with the remaining sauce and sprinkle with the remaining cheese.
Step 8
Bake for 20-25 minutes or until hot and bubbly. Let stand 5 minutes before serving.
