4orange bell peppers
1 cuprice
cooked, white, brown, or cauliflower rice
1 lbground beef
turkey, or plant-based meat substitute
1onion

2cloves garlic

1 x 15 ozcan diced tomatoes

cheddar, Monterey Jack, or your choice

Instructions
Preheat Oven
Step 1
Preheat your oven to 375°F (190°C).
Prepare the Peppers
Step 2
Cut the tops off the orange bell peppers and remove the seeds and membranes. Use a sharp knife to carve jack-o'-lantern faces into the sides of the peppers. Set aside.
Cook the Filling
Step 3
In a skillet over medium heat, cook the ground meat until browned. Drain any excess fat.
Step 4
Add the diced onion and minced garlic, cooking until the onion is translucent.
Step 5
Stir in the cooked rice, diced tomatoes, chili powder, cumin, salt, and pepper. Mix until well combined and heated through.
Stuff the Peppers
Step 6
Remove the skillet from heat and stir in half of the shredded cheese. Spoon the filling into each carved bell pepper, packing it tightly.
Bake

Place the stuffed peppers upright in a baking dish. Add a little water to the bottom of the dish to create steam and help cook the peppers.
Cover the dish with foil and bake for about 30 minutes.

Add Cheese and Finish

Remove the foil, sprinkle the remaining cheese on top of each stuffed pepper, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let cool slightly. Garnish with fresh cilantro or parsley.
