Instructions

Step 1
In a small bowl, combine the warm milk (around 37°C), 1 tsp of sugar, and the dry yeast. Stir gently and let sit for 5-10 minutes until the mixture becomes foamy and bubbly, indicating the yeast is activated.
Step 2
In a large mixing bowl, combine the all-purpose flour, cocoa powder and 30g of sugar. Add the activated yeast mixture, the egg, and the softened butter. Mix everything together until a dough forms. Knead the dough on a floured surface for about 8-10 minutes, until it becomes smooth and elastic.
Step 3
Place the dough in a lightly greased bowl, cover it with a kitchen towel or plastic wrap, and let it rise in a warm place for about 2 hours or until it doubles in size.
Step 4
While the dough is rising, prepare the filling. In a small bowl, mix the softened butter, brown sugar, cocoa powder and ground cinnamon until smooth and well combined.
Step 5
Once the dough has risen, punch it down to release the air. Roll it out on a lightly floured surface into a rectangle, about 30x40 cm. Spread the chocolate cinnamon filling evenly over the surface of the dough.
Step 6
Carefully roll the dough tightly from one long side to the other to form a log. Place the log in the freezer for 15 minutes to firm up, making it easier to cut.
Step 7
After 15 minutes, take the dough out of the freezer. Using a piece of food-safe string or dental floss, slide it under the log and cross the ends over the top to cleanly slice the dough into 12 rolls. Place the rolls into a greased baking dish, leaving some space between each roll.
Step 8
Cover the rolls with a towel and let them rise for another 30-45 minutes.
Step 9
Preheat the oven to 180°C (350°F). Bake the rolls for 15-20 minutes, or until golden brown.
Step 10
In a small bowl, beat cream cheese, sugar, and vanilla until smooth.
Step 11
Once the rolls are baked, spread the cream cheese mixture on top of the warm rolls. Let them cool slightly before serving. Enjoy!
