Step 1
Melt butter in a pan add diced onion and fry until softened then add the garlic and thyme and fry another minute .

Whisk in the flour cooking for a minute then slowly whisk in the vegetable broth until it’s smooth . Add the broccoli salt to taste paprika pepper and brin a boil then lower the heat to medium cover with a lid and cook for 12 minutes ( I like my brocolli with a bit of bite cook another 3-4 minutes if you want a softer texture )

Remove the lid then stir in the cream and cheese and serve . This makes 4 large bowls or 6 smaller portions . If you like a thinner soup simply add more broth or milk or cream and stir in )
