Instructions
Step 1
Cook couscous according to packet instructions.
Step 2
Combine haloumi with 20 mls of lemon juice, honey and 5 mls of olive oil.
Step 3
Heat a pan on high and add haloumi. Sear on both sides for 2-3 minutes until crispy.
Step 4
Make dressing by combining 20 mls of lemon juice, 10 mls of olive oil, salt, parsley and water.
Step 5
Combine cooked couscous with spinach, cucumber, red onion and tomato. Top with haloumi and pour dressing on top.
Step 6
Divide into two serves and store leftovers in the fridge. Add dressing each day for freshness.
