Step 1
Peel and slice the potatoes then put them in a bowl of very cold water for 20-30 minutes .

Fry an onion in a wide pan with some
Oil for 5 minutes then add the bacon and fry one more minute . Remove from the pan and set aside for later .

Drain and dry off the potatoes then add them to the same pan with hot oil in the bottom of the pan. Cook on medium high heat for a few minutes but don’t move them around as you want some color on there . After a few minutes flip them over then cook until they are golden and crispy around the edges .
Step 4
Add salt and pepper to taste garlic powder and paprika then cook another minute . Serve with chives and enjoy .
