Instructions
Step 1
Peel and shred the potato. Transfer to a bowl and season with salt and pepper. In a pan on medium heat add the butter
Step 2
Once the butter has melted, squeeze as much of the water out of the potato as you can and add it to the pan. Shape it and press it down with a spatula.
Step 3
Once you start seeing brown sides and bits in the middle, flip it and cook for another 5 minutes. Serve with some flaky salt, the sour cream and chives
