Instructions

Step 1
In a skillet over medium heat, melt the butter. Add the cream cheese, pumpkin puree, sweetened condensed milk, and spices, stirring constantly until the mixture thickens and is well combined.
Step 2
Stir in the graham cracker crumbs and chocolate chips, continuing to mix until the chocolate chips have melted and the mixture is smooth.
Step 3
For a more vibrant look, you can optionally add a few drops of orange food coloring.
Step 4
Keep stirring until the pumpkin mixture pulls away from the sides and bottom of the pan. If it’s too thin, cook a bit longer to thicken it.
Step 5
Transfer the mixture onto a buttered baking sheet. Spread it evenly and refrigerate until firm, about 2 hours or overnight.
Step 6
Once chilled, lightly butter your hands and shape the pumpkin mixture into small balls.
Step 7
Roll the truffle balls in granulated sugar to coat them evenly.
Step 8
Using a toothpick, gently press ridges along the sides of each truffle to resemble pumpkins.
Step 9
Finish by pressing a chocolate chip into the top of each truffle to create a “stem.”
