Instructions

Step 1
Brown meat in a Dutch oven or a braiser in oil or clarified butter until fond forms.

Add onions, carrots, and peppers (optional) and cook until onions are translucent. Season with salt and pepper. Meat doesn't have to be cooked through.

Step 3
Add cabbage and tomato paste or ketchup. Put in oven at 350° and cook for about 10 minutes. Check if there's a little juice at the bottom of the pan. If the pan is dry, add a little water. Mix and cook for another 20-25 minutes, or until the cabbage is soft.

Step 4
Add sugar and/or more ketchup. Mix and cook for another 5 minutes. At this point tomato paste is not an option, as it will not have enough time to cook; it has to be ketchup.
