Crumb Topping

½ cupmilk
½ Tbspapple cider vinegar
1 ¼ cupall-purpose flour
1 tspbaking powder
1 tspcinnamon
½ tspsalt
⅔ cupgranulated sugar
½ cupbutter
melted
½ cupgreek yogurt
1 tspvanilla extract

Instructions
Preheat the oven and prepare the pan
Step 1
Preheat the oven to 175˚C. Grease and line a small baking pan with parchment paper; set aside.
Prepare crumb topping
Step 2
In a small bowl, combine the brown sugar, flour, cinnamon, and melted butter. Mix with a fork until well combined and crumbly. Cover and place into the fridge until ready to use.
Make the cake batter
Step 3
In a medium bowl, whisk together the milk and apple cider vinegar. Set aside and let sit for a few minutes.
Step 4
In a separate small bowl, whisk together the flour, baking powder, cinnamon and salt. Set aside.
Step 5
Add the melted butter, yogurt, and vanilla extract to the milk/apple cider vinegar mixture. Whisk to combine.
Step 6
Add the dry ingredients to the wet and mix until just combined. Set aside.
Prepare cinnamon apples
Step 7
Add the chopped apples to a small bowl, and toss with 1 tbsp of cinnamon.
Prepare cinnamon filling
Step 8
Then, combine the brown sugar and other 1 tbsp of cinnamon together in a small bowl.
Assemble and bake
Step 9
Spread half of the cake batter into the bottom of the prepared pan. Sprinkle the brown sugar/cinnamon mixture all over the surface, then top and spread with the rest of the cake batter.
Step 10
Scatter the cinnamon apples all over the top, and the top with the crumb topping.
Step 11
Bake at 175˚C for 55-60 mins. or until a toothpick inserted into the middle comes out clean.
Make the glaze and serve
Step 12
While the cake is cooling, make the maple glaze by whisking all of the ingredients together in a medium bowl.
Step 13
Drizzle the cake with the maple glaze. Slice and serve.
