4 gramsvanilla extract

2 gramsground nutmeg
365 gramsall purpose flour
1 gramsground cloves
1 gramground cardamom
1.25 gramsground black pepper
2.25 gramskosher salt
58 gramsegg
112 gramscandied ginger
3 gramsground cinnamon
Instructions
Step 1
Cream butter and sugar together until light and fluffy
Step 2
Mix all dries together in a separate bowl
Step 3
Mix molasses, egg and vanilla extract in a separate bowl
Step 4
Add 1/3 of the dry ingredients to the butter and sugar followed by half of the wet ingredients
Step 5
Add another 1/3 of the dries, then the remaining wet and finish with the rest of the dries
Step 6
Add the chopped candied ginger and portion out into 72 gram balls
Step 7
Roll in turbinado sugar and dust with black pepper and kosher salt
Step 8
Bake in oven at 350 for 10 minutes and then 275 for 6 minutes
