Boil potatoes, cubed, until tender (Approx. 20 min).
Step 2
Drain water and pour into a large mixing bowl.
Mix
Step 3
Add yogurt, flour, and beet juice (for a fun pink color!) to potatoes.
Step 4
Stir using electric mixer on high speed until all lumps are gone and potatoes are smooth and creamy.
Step 5
Add more yogurt until desired consistency.
Frost
Step 6
Spread frosting mixture evenly over the cake. Add your fav Bocce's treats to top of the cake to decorate!
