Ingredients

1 tblsolive oil

1 cuppotatoes
diced

1 cupbell peppers
diced

½ cuponions
diced

2 cupspinach

8eggs
beaten

⅛ tspcumin

¼ tspcumin

¼ tsppepper

4 ozshredded cheese
88 tortilla

1 cuppico de gallo

4 cupsstrawberries
4 slicesHickory Wood Bacon

Instructions
Step 1
Heat a large pan on medium heat and add 1 tablespoon of olive oil.
Step 2
Add sweet potatoes and cook for 5- 7 minutes. Combine onions and peppers to the sweet potatoes. Cook for 3-4 minutes until the sweet potatoes start to brown. Add the spinach and let it wilt.
Step 3
Add eggs, cumin and pepper to the vegetable mixture and cook for an additional 4-5 minutes. Stir until eggs are firm.
Step 4
Make the burritos by placing one tablespoon cheese and 1/2 cup egg filling onto each tortilla. Fold the sides of the tortilla and roll.
Step 5
Serve immediately with pico de gallo and strawberries or freeze for later.
